PECAN PIE BARS



1. Preheat oven to 350 degrees

  • 3 Cups all-purpose flour
  • 1/4 Cup white sugar
  • 1/3 Cup Brown sugar
  • 1 Cup Butter
  • 1/2 tsp salt
2. In a large bowl combine the flour, sugars, butter, and salt until the mixture becomes crumbly. 

3. press crust mixture into the bottom of a greased 9X13 inch pan and bake for 20 minutes.



  • 1 stick (1/2 Cup) unsalted butter
  • 1 Cup light brown sugar, packed
  • 1/3 cup honey
  • 2 TBSP heavy cream
  • 2 cups pecans, chopped


4.
combine the butter, brown sugar, honey and heavy cream in sauce pan and stir over medium heat. Simmer for about 1 minute and add in pecans.



5. remove crust from oven and pour pecan mixture on top. making sure to smooth over entire surface.

6. return to oven and bake for 2o additional minutes.

7. remove bars from oven and allow to cool before removing from pan.

FUDGEY PECAN PIE



1. Preheat oven to 375 degrees

  • 1/3 Cup butter
  • 2/3 Cup sugar
  • 1/2 cup Hershey's cocoa
2. Melt butter in sauce pan over low heat, add sugar and cocoa. Stir until well blended and set aside to cool

  • 3 eggs
  • 1 Cup light corn syrup 
  • 1/4 tsp salt
  • 1 Cup chopped pecans
  • 1 unbaked 9 inch pastry crust
3. Beat eggs slightly in medium bowl. stir in corn syrup and salt. Add cocoa mixture and mix well. Stir in pecans.

4. Pour into crust and bake for 45 to 50 minutes or until set.

5. remove from oven and cool. let set about 8 hours before serving.

** Garnish with whipped cream and pecan halves**

PUMPKIN PECAN PIE



Since Thanksgiving is right around the corner I thought I may add some super yummy recipes that fit right just for the holiday.

Pumpkin Pecan Pie

1. Preheat oven to 400 degrees

  • 1 can (15oz) packed solid pumpkin
  • 1 can (14oz) sweetened condensed milk
  • 1/4 C butter, softened
  • 1 egg
  • 1 tsp ground cinnamon
  • 1tsp Vanilla
  • 1/2 tsp ground nutmeg 
  • 1/4 tsp salt
2. Combine all above ingredients above into large bowl

3. pour into 9 inch graham cracker crust and bake for 20 minutes
  • 1 egg
  • 2 TBSP  packed brown sugar
  • 2 TBSP dark corn syrup
  • 1 TBSP butter, melted
  • 1/2 tsp maple flavoring
  • 1 Cup chopped pecans
4. Beat above ingredients in medium bowl with mixer set to medium speed until blended well. stir in pecans

5. remove pie from oven, top with pecan mixture.

6. reduce oven temp to 350 and bake for 25 minutes or until toothpick inserted in the center comes out clean.

A PERFECT DAY FOR CHILI

I believe today has been the coldest day so far this fall. And when it gets cold it's time to make a big pot of chili.
  • I start by browning and draining 2 LBs of ground beef.
In a large pot add beef and all remaining ingredients 

  • 1 29oz can of tomato sauce
  • 2 10oz cans of diced tomatoes with green chilies.
  • 1-2 16oz cans of red kidney beans.
  • 1-2 16oz cans of pinto beans

  •  1 cup Diced yellow onion (LG onion)
  • 1/4 cup celery stalk (1 stalk)

  • 2 TSP Cumin powder
  • 3 TBSP Chili powder
  • 1 1/2 TSP Black Pepper
  • 2 TSP Salt 
  • 2 Cups Water
Bring all ingredients to a simmer over low heat. Cook for 2-3 hours stirring every so often.

*** You can also make in the crockpot either set on low for 5 hrs or high for 2***

** For a spicier chili add 1/2 TSP more black pepper and 1 TBSP cayenne pepper. And for those real iron bellies add 4-6 diced Jalapeno peppers***

With about an hour left I slice up 1 whole beef smoked sausage and toss it into the pot.

When finished Top with mild or sharp cheddar cheese serve with crackers and ENJOY..

QUICK AND EASY DINNER FOR 6- TACO BAKE

I came across a base recipe for taco bake on Pinterest and put my spin on it.
I start out with about 4lbs of ground beef, 2-3 taco seasoning packets, 1 med-lg sweet onion, and 1 jar of Salsa Can Queso
 You want to begin by browning your ground beef. for 6 people I use 3-4lbs of beef. this time I used 4
when most of it is done add your diced large sweet onion and finish browning beef 
Next step it to drain beef and onion
return to pot and add your taco seasoning. I used 2 packs so that it wouldn't be too spicy
When beef is ready it's time to stir in the Salsa Con Queso cheese. I use a whole jar.
Preheat oven to 350. you'll want to have a round cake pan to make your layers in. I use Lg tortillas, shredded mexican cheese blend, sliced black olives, and bacon pieces
place one tortilla on the bottom, add a layer of beef mixture top with black olives and cheese blend
start the second layer with a tortilla, layer of beef mix, bacon pieces and cover with cheese blend. The third and last layer will be the same. Place in the oven and bake for 15 minutes
Now it the best time to start the side. which I chose Mexican rice for tonight. I just follow the simple directions on the bag. 
when the bake is removed from the oven it time for the toppings!!
I top with shredded lettuce, Pico De Gallo, Sliced black olives, more bacon pieces, and melted Gordo's melted cheese dips.
And this is your finished product!!
Add your side and it's dinner time :)

QUICK AND EASY DINNER FOR SIX- COWBOY SANDWICHES

  My husband dubbed these my cowboy sandwiches they are so simple and the family loves them.


I started out with 3LBs of thin cut Milanesa steak
Sliced into bite sized stripes
Cut off all unwanted fat

These are my seasons of choice for the meat
After seasoning I set the meat aside to marinate 
As a side I prefer white rice with a little beef bouillon to flavor. Now is a good time to preheat the oven to 400 degrees for the bread later.
Prepare by box instructions add bouillon to you liking. Personally I make enough servings for 8 so I add 2-3 cubes
Now is a good time to start sauteing 1 large sweet onion sliced. Once they are nice and transparent I set them aside in a bowl till the meat is done
In the same pan add about a TBSP of butter and brown meat
Now that meat is done add onions and let simmer with lid on till dinner is ready
To toast the bread I put a thin layer of butter on the bottom of my cookie sheet 
I also butter the top of the buns. For the kids I prefer to use hotdog buns they are the perfect size for smaller appetites 
My family loves white gravy on their rice. I just use this brand and I make it while the bread is toasting.
When oven reaches 400 degrees. put bread in for 5 mins
Flip an toast for 5 more mins
Add any veggie of your choice for your other side. My kids chose corn for tonight

you can top with shredded mozzarella cheese

Or as my husband prefers just smother in gravy

serve and you'll have a fan favorite!!
